How to Melt Cheese

Knowing how to melt cheese perfectly for a cheeseburger, on chicken, or even on a slice of toast sounds easy enough, doesn’t it? I mean, gah, everybody knows how to melt cheese. Right?
Well, over the years, I’ve found that some ways of melting cheese just work a whole lot better than others. At least in my opinion.
For instance, my family loves cheeseburger steak with mushroom and onion saute on a regular basis. We also love burgers cooked on the grill and cheesy chicken dripping with pico de gallo. But, I’ve found that just tossing the cheese onto the burgers at the last minute on the grill can leave the cheese not exactly perfectly melted.
Little Buddy had a friend over a while back and I made one of our regulars of skillet cheeseburgers. When I asked his friend if he wanted cheese on his, he said, “no, m’am.” So, leaving cheese off of his, I pulled his out of the skillet and then prepped the burgers with the cheese for the rest of ours. Then, later when I placed them on the table, he said, “I think I do want one with cheese. Do you mind?”
“Of course I don’t mind.” I popped his back into the skillet, melted the cheese, served it up, and watch him devour it. I asked him what made him change his mind about the cheese and he said, “Usually the cheese is sort of tough.”
Realizing what he meant, I told him my little tip for melting it perfectly.
The next day, his Mom called me to thank me for sharing my little cheese tip with him. “Life changing” was her description.
So, while I’m not sure this tip is exactly life changing for everyone, it does make all the difference for me in getting perfectly melted cheese for so many dishes.
You ready? It’s super simple.
Cover it.
Yep, that’s it. Just pop the lid onto the skillet, cookware, or if you are using a grill or the oven, just use another piece of cookware large enough to cover the food without preventing the grill or oven from closing. For instance, I’ll place a deep skillet over chicken that is cooking on the grill to get the cheese to melt perfectly or use a square baking pan that I use to bake my brownies when getting cheese to melt just right in the oven.

I sure hope not!
If you’ve hung around this long, give it a try the next time you need to melt cheese on burgers, chicken, or whatnot. I promise, you’ll be as hooked as I am.

It’s good to know that different cheeses melt differently. My wife and I want to host a party where all the food is made from our labors. I will keep this in mind as we find a cheese making workshop to see what cheese we make melts best!

When I first moved out, I had a hard time melting my cheese right. When I asked them about it, they told me that they cover it. Now that I am seeing this again, I know it must be a good way to do it!

Story made me smile.. I do cover mine just like you mentioned. My nephew cracked me up one day. He said his friend’s mom made “special” hotdogs. So good, and different from what his mom makes. She heard him carrying on about them for awhile so she did what your son’s friend’s mom did. She called her. The special hotdogs…Nothing more than steamed with water. We had them that way as kids, but always grill them or fry them, but now, she steams for the boy. So funny.
That is the way my mom mekted cheese and I’m glad I saw her doing it, it dies work perfectly, I now know if we meet..we will most likely have more fun things in common too ๐

Great and simple tip!! This is also my favorite easy way to melt cheese! It melt perfect every time!
I never think of a lid when melting cheese on a burger but I always cover sunny side eggs to cook the top. duh and thanks ๐
