Lately, my family has loved having these mushroom lettuce wraps for a quick lunch or supper. Since they are such a simple recipe to pull together and utilize ingredients that I usually have on hand, they make a great go-to meal when we are in a hurry.
I begin by tossing my sliced mushrooms into a skillet with a drizzle of olive oil. Then, I add in a can of drained cannelini beans, tomatoes, diced onions, diced peppers, and a few other things and allow it all to cook for the peppers and onions to soften.
These mushroom lettuce wraps make the perfect thing to make when you are looking for a quick-fix meatless meal that everyone will enjoy.
Paired with my oh so simple roasted red pepper ranch dressing, these mushroom lettuce wraps are truly one of those meals I turn to time and again. I think you will, too.

I can never get enough mushrooms–they are one of my favorite foods! Lettuce wraps are such a perfect dinner for summertime.
I love this idea! I would have to make them for lunch though since my husband is not a mushroom fan, and that is ok because it just means more for me!
This looks glorious!!
