Monday:ย ย Best Instant Pot Chiliย ย + Tortilla Chips (Instant Pot, Make Ahead)
Tuesday: Shredded Chicken Burritosย +ย Refried Beansย +ย Pico de Gallo(Make Ahead)
Wednesday:ย Red Pepper Mushroom Black Bean Soupย + Rice +ย Chewy Sugar Cookiesย (20 Minutes or Make Ahead)
Thursday:ย Baked Chicken Parmesanย withย Homemade Marinara Sauceย + Pasta + House Salad (Make Ahead)
Friday:ย ย General Tsoโs Chicken Recipeย ย +ย Easy Lo Mein Noodlesย (30 Minutes)

Sunday:
Grandmotherโs Chicken & Dumplings:ย As soon as the first bit of a chill is in the air, I immediately start thinking about Grandmotherโs Chicken and Dumplings! I love to make this treasure on weekends because I like to cook the chicken low and slow. Itโs really simple and oh goodness gracious is it ever so worth it!
Monday:
Best Instant Pot Chili: This delish chili is so easy to make and is ready in just 30 minutes in the Instant Pot, yet it tastes like itโs been simmering away all day!
Iโll have my chili fixings prepped and ready in the fridge so I just grab them when itโs time to serve the chili for supper.
Tuesday:
Shredded Chicken Burritos: This classic burrito is so simple to make and ready in 30 minutes! But they are great to make ahead and even stock in the freezer! Iโll make these ahead of time โ to do that, just simply prepare burritos and wrap each individually with parchment paper followed by plastic wrap or foil. Store in the refrigerator for up to 5 days. To reheat and serve, microwave for 3 minutes (remove foil, if wrapped in foil) or in the oven at 350ยบ F for 25 minutes (remove plastic wrap, if used). Easy as can be and even more delicious!
Wednesday:
Red Pepper Mushroom Black Bean Soup: Weโre having a meatless meal with this super simple, super tasty soup! You can chop the veggies for the soup earlier in the day and store in the fridge, but this is a quick supper and on the table in minutes!
Thursday:
Baked Chicken Parmesan: This delicious dish bakes in a little less than an hour and the prep time is minimal, making this an easy dish for supper. You can shred your mozzarella earlier in the day if you wish to save a little time at supper.
Homemade Marinara Sauce: This is so easy and quick to make, but I love to make it ahead and keep in the refrigerator to grab when I want it. I like making my own, but if you have a store-bought marinara you like, you can use it as well.
Friday:
General Tsoโs Chicken and Easy Lo Mein: One of my favorite, somewhat spicy takeout foods that I love made at home! Itโs so quick and easy, itโs on the table in 30 minutes!
