This easy Roasted Green Beans recipe makes a tasty side dish in just 15 minutes for green beans that are tender and delicious with caramelized edges. Simple to make with just three ingredients!

Green beans are certainly one of my family’s favorite vegetables. They taste delicious prepared in many ways and pair well with many main dishes, from Swedish Meatballs to Chicken Parmesan. But there’s something slightly more elevated about the taste of this Roasted Green Beans recipe that gives this favorite veggie a rich, caramelized flavor and is ready in minutes!

You only need a few ingredients, a sheet pan and your oven! Here’s how you’ll make them.

You will need fresh, crisp green beans, a quality extra virgin olive oil and kosher salt. It’s optional, but you toss on some lemon wedges when you serve them.

Tips for the Best Roasted Green Beans!

  1. Use fresh, snappy green beans. Start with fresh, firm, and crisp green beans. They should snap easily.
  2. Pat Dry. Make sure to dry them before adding oil and roasting. Water can cause soggy spots instead of staying crisp when cooked.
  3. Don’t overcrowd or overcook. If you need to make more than will spread out on one pan, split the beans into two pans. Just roast them until they get a few caramelized spots, and don’t roast them too long.

How to Make Roasted Green Beans

  1. Prep. Preheat the oven. Wash the fresh green beans and trim the ends off of them. Pat the beans dry with a paper towel. You don’t want to leave any damp spots on the beans as it can impact the texture of the roasted green beans.
  2. Roast and Serve. Then, arrange the green beans on a rimmed baking sheet, drizzle with olive oil, and sprinkle with salt. Toss to coat and roast in the oven until the green beans begin to caramelize in a few spots and are crisp tender (about 15-20 minutes). Remove when done and serve immediately.

Storage Tips

Allow the roasted green beans to cool, cover them well with wrap, or place them in an airtight container. Store them in the refrigerator for up to 5 days.

  • 3 pounds fresh green beans
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 medium lemon, sliced (optional for serving)

Instructions 

  • Preheat oven to 425º F. Wash and trim the ends of the green beans. Pat the green beans dry with paper towels and arrange on a rimmed baking sheet.
  • Drizzle the green beans with olive oil and sprinkle with salt. Toss to coat. Roast until the green beans have a few golden spots and are crisp tender, about 15 to 20 minutes. Remove from the oven and enjoy immediately or store in the refrigerator for up to 5 days.
