Guess what, friends? Not only is it almost Christmas, it’s Week 52 of the Meal Plans! It’s been a whole year and I really hope they’ve been as helpful to you as they have to me!!! Since it’s a special milestone week, I’m sharing some popular Fall and Winter favorites!

Saturday: Grandmother’s Chicken and Dumplings (from the Add a Pinch Cookbook)

Sunday:  Spanish Rice with Ground Beef + House Salad + Make Ahead Favorite Christmas Cookies (30 Minutes, Make Ahead)

Monday:  White Chicken Chili (Slow Cooker)

Tuesday: Chicken Enchiladas + Cilantro Lime Rice   (Make Ahead + 30 Minutes)

Wednesday: Baked Salmon with Parmesan Crust + House Salad (30 Minutes)

Thursday: Swedish Meatballs with Noodles + Slow Cooker Green Beans (Make Ahead + Slow Cooker)

Friday: Eat Out

MEAL PLAN TIPS:

Saturday:
Grandmother’s Chicken and Dumplings: It’s really cold, so I automatically start craving Grandmother’s Chicken and Dumplings! I love to make this treasure on weekends because I like to cook the chicken low and slow. It’s really simple and oh goodness gracious is it ever so worth it!

Sunday:
Spanish Rice with Beef: This main dish meal couldn’t be simpler to make! It’s absolutely delicious, so easy and ready in 30 minutes. If you want, you can chop your onions and mince your garlic ahead of time – otherwise this one is pretty quick already!
Make Ahead Favorite Christmas Cookies: Some of my family’s very favorite cookies I make for Christmas are on this list! I’ve shared so many tips to make them ahead so you can save time and make holiday baking a little easier!

Monday:
White Chicken Chili:  I’ll pop everything into the slow cooker the night before and place the insert into the refrigerator overnight. Then, before I head out in the morning, I just put the insert back into the slow cooker and set it to cook for the day!

Tuesday:
Chicken Enchiladas: Supper simple tonight –  I cooked my chicken ahead over the weekend. I also keep my homemade Enchilada Sauce on hand that I’ll use in these.

Wednesday:
Parmesan Crusted Salmon: A definite staple in my house! To make prep go even faster, go ahead and grate your Parmesan cheese and chop your parsley. Store them in separate airtight containers in the refrigerator and just grab and use when cooking.
House Salad: I generally like to make a huge salad earlier in the week which helps make weeknights even easier!

Thursday:
Swedish Meatballs: My Mama has made this dish for so many years – even as an appetizer! So delicious! You can go ahead and form your meatballs and set in the fridge for a bit if you want to make them earlier in the day.
Slow Cooker Green Beans: Prepare the recipe in the slow cooker insert, place in fridge overnight, then pop the slow cooker insert in the fridge before leaving for the day. Easy as can be and so delicious!
