Can you believe this Sunday is Father’s Day?
June is flying by like when I was a little girl and would push my bike to the top of the hill on the road from my house to my grandparents. It was the summer after the county had just put in a new coating on the asphalt road – you know the kind that is black and hard, but still has bumpy gravel. It would take me a little while to get up my nerve to push my bike to the top of that hill, then I’d climb onto the white seat, grip my handlebars with the streamers tied to them, and push off. There was no way of stopping once my tiny foot left the ground. I was off, flying and giggling and feeling like butterflies were flittering away in my tummy the entire time.
Well, June has felt a lot like that, too.
It just seems like yesterday we welcomed spring and wiped the sleepies from our eyes the morning after we reset our clocks ahead. Now, we’re thinking of meals to celebrate the special men in our lives and wracking our brains for something special to give them.
I thought it would be a great time to share a recipe with you that I think would make a wonderful addition to your Father’s Day weekend celebration – Caprese Grilled Chicken with Balsamic Reduction.
If you love caprese salad as much as I do, this chicken is going to become one of your favorite dishes, too. Think of it as a complete meal in one recipe, because really… it is. It is perfect for lunch or a light supper and makes a mighty impressive presentation, but for Father’s Day, you could add a side of asparagus or another vegetable to round out the meal.
Here’s how I make it.
- 6 grilled boneless, skinless chicken breasts
- ¼ cup balsamic vinegar
- 1 tablespoon butter
- 6 slices mozzarella cheese
- 6 slices tomato
- 6 large basil leaves
- Prepare chicken on the grill. As chicken is cooking, pour balsamic vinegar into sauce pan or skillet and cook until reduced by half. Add in butter and stir with a flat whisk until completely combined. Set aside.
- Top chicken with mozzarella cheese, basil leaf, and then tomato slice.
- Drizzle with balsamic reduction and serve warm.
I can’t wait to hear how you enjoy this recipe. It has quickly become one of my favorite weeknight go-to dishes!
I hope your family has a wonderful Father’s Day weekend!
Enjoy!
Robyn

Oh my gosh Robyn… that made me smile so much. My oldest just got her first big kid bike and it has streamers on the handles. I think that’s an absolute must for girls for some reason lol. This dish sounds fantastic… I looove chicken in any way possible.
Those streamers are my favorite thing I remember about my bike when I was little. They were glittery and flew in the air when I rode down the hill. I loved them something fierce!
Looks absolutely delicious! It will definitely be part of our dinner menu next week.
Oh Emily, I’m so glad! I can’t wait to hear how you like it. It is definitely one of our favorites now!
Wow, this looks amazing. I will eat anything with a balsamic reduction. Beautiful dish, Robyn!
I’m with you on the balsamic reduction. I could eat it with a spoon! It makes this recipe sing, too!
I was just thinking I wanted to try a new grilled chicken dish this weekend and then I saw your tweet. This is gorgeous, Robyn and I think it needs to be on my menu.
Thanks so much, Dara! That means a ton coming for the Girl Grilling Queen!!!
I can’t wait to hear how you like it.
This looks like the perfect summer meal! So quick and so flavorful!
Thanks so much, Missy. I bet your boys will gobble it up as fast as mine do. Happy weekend!
Oh Robyn, sweet Mamma does this look ah-mazing!
I think you’ll love it, Paula! Those flavors are just perfection on a plate!
Oh this just looks perfect! We’re trying to cut out carbs big time and this is just what we need.
Carbs and I are always doing battle and this is just the thing I need in my arsenal to not miss them! Hope y’all enjoy this as much as we do. It’s great on the smoker, too! It gives the mozzarella a bit of a smokey deliciousness for sure!
How did you know that balsamic reduction is my ABSOLUTE favorite thing ever?!
It works on just about anything, doesn’t it?
Thinking of you on your bike put a smile on my face….thanks! The chicken looks absolutely gorgeous, all my favorite things in one dish!! Hope your family has a Happy Father’s Day!
I hope you have a wonderful Father’s Day too, sweet friend!
I bet the balsamic reduction is the key to this recipe. It looks heavenly! Pinning this!
I’m making this today, with fresh green beans and fresh sweet corn. Can’t wait, so we may be eating early!
Thank you!
Oh Jan, that sounds like a delicious meal for today! I can’t wait to hear how you like it!
Love, love, LOVED it! Quick, easy, and my new favorite way to make chicken breasts. I’m certain I’ll be making this often.
YAY! I’m so glad you loved it, Jan!!! Isn’t it so easy? It’s a favorite of ours, too!
This looks and sounds fantastic
Oooo Robyn, we had great meals yesterday, but I would have loved to fit this in!!
Oh my word! I’m firing up the grill tonight. xoxo
Do you use fresh mozzarella (packed in water) or the blocks of mozz you find with the other sliced cheeses in the dairy case? I can’t wait to try this tonight!
I use mozzarella from the dairy case. It is not already sliced, but I’m sure that type would taste wonderful as well.
WOW, Robyn!!! Made this for dinner tonight & it was everything you promised … easy, light, and very refreshing!!! I marinated my chicken for about 2 hrs in a balsamic/oil mixture before grilling it, which added extra moisture to the chicken. Will definitely be making a lot more! Thanks for the great recipe!
What exactly was your marinade? How much balsamic did you use and what kind of oil? Sounds like it would give it that extra moisture, like you said!
Thanks! I actually wound up using the fresh mozzarella and it was delicious!! The only thing I will do next time is rub the chicken breast with a little oil and salt and pepper them. The flavor of the balsamic reduction was delicious and the combination of flavors was wonderful, but the chicken itself was a little bland (as chicken can be!). Thanks so much for the recipe, I’m on South Beach, and this fit in very nicely.
What can you make a side dish to this chicken if you don’t want a starch like potatoes or pasta?
Hi Samantha,
I like to serve a big salad, grilled asparagus, or another fresh vegetable as a side dish, too.
I’m assuming that when you say add the balsamic butter into the pan, you mean balsamic vinegar? Is that a typo? And how do you know when it’s reduced? What will it look like?
Hi Keri! Yes, it is balsamic vinegar! The balsamic reduction will be thicker and a bit on the syrupy side when it has reduced. The liquid will have reduced by about half.
Wow…I’m not known for my creativeness in the kitchen, but this was a MAJOR hit! I used the little George Foreman grill and it turned out just great. Thanks so much for making me look (for one night at least) that I know what I’m doing in the kitchen.
I made this tonight but our grill isn’t working now so I baked the chicken. We LOVED it, this will definitely become a regular in our dinner! That balsamic reduction was to die for!
Hey! I was wanting to bake these as well, do you remember how you did them?
We loved this recipe–what a great idea! The only thing I did different was marinate the chicken for a few hours before as another commenter suggested. (1/2 c balsamic, 1/4 c olive oil, 1 tsp dried basil, 1/2 tsp garlic powder, 1/4 tsp pepper). So glad I found this via Pinterest–thank you!
I just made this tonight and followed the recipe exactly as it is written. It is absolutely delicious! thank you
This looks AMAZING! Going to a friends house this weekend to BBQ..Def. Trying this
Hi Deanna,
I can’t wait to hear how you and your friend enjoy it this weekend. It is a definite favorite with everyone that we make it for and we’ve served it a ton this summer. Enjoy and have fun at your friend’s house! Isn’t it the best thing ever to visit and cook together? Love it!
How do you make the balsamic reduction
I actually am in the process of making this chicken now….i really do hope it’s going to be great….we couldn’t find balsamic vinegar so i’m hoping that the balsamic vinaigrette will work…wish me luck
