This year is flying by like when I was a little girl and would push my bike to the top of the hill on the road from my house to my grandparents.

It was the summer after the county had just put in a new coating on the asphalt road – you know the kind that is black and hard, but still has bumpy gravel. It would take me a little while to get up my nerve to push my bike to the top of that hill, then I’d climb onto the white seat, grip my handlebars with the streamers tied to them, and push off.

There was no way of stopping once my tiny foot left the ground. I was off, flying and giggling and feeling like butterflies were flittering away in my tummy the entire time.

Well, this year has felt a lot like that, too. So full of excitement and…. well… fun!

It just seems like yesterday we welcomed spring and wiped the sleepies from our eyes the morning after we reset our clocks ahead. Now, we’re thinking of meals to celebrate the special men in our lives and wracking our brains for something special to give them.

I thought it would be a great time to share a recipe with you that I think would make a wonderful addition any summer celebration or a quick and easy weeknight meal – Caprese Grilled Chicken with Balsamic Reduction.

If you love caprese salad as much as I do, this chicken is going to become one of your favorite dishes, too. Think of it as a complete meal in one recipe, because really… it is. It is perfect for lunch or a light supper and makes a mighty impressive presentation, but you could add a side of asparagus or another vegetable to round out the meal.

Caprese Grilled Chicken with Balsamic Reduction Recipe

The perfect combination of grilled chicken topped with caprese salad and balsamic reduction sauce.
Serves: 6
  • 6 grilled boneless, skinless chicken breasts
  • ¼ cup balsamic vinegar
  • 1 tablespoon butter
  • 6 slices mozzarella cheese
  • 6 slices tomato
  • 6 large basil leaves
  1. Prepare chicken on the grill. As chicken is cooking, pour balsamic vinegar into sauce pan or skillet and cook until reduced by half. Add in butter and stir with a flat whisk until completely combined. Set aside.
  2. Top chicken with mozzarella cheese, basil leaf, and then tomato slice.
  3. Drizzle with balsamic reduction and serve warm.

    MMM this looks delicious. I marinated the chicken in buttermilk overnight ( which makes chicken tender and juicy no matter what you do to it. ) then sprinkled with onion powder, garlic powder, marjoram, oregano and salt and pepper. It’s sitting on the plate waiting for my husband to get home so we can grill it. :) I think fresh corn on the cob will go nicely with this.

    I actually am in the process of making this chicken now….i really do hope it’s going to be great….we couldn’t find balsamic vinegar so i’m hoping that the balsamic vinaigrette will work…wish me luck 😀

    We loved this recipe–what a great idea! The only thing I did different was marinate the chicken for a few hours before as another commenter suggested. (1/2 c balsamic, 1/4 c olive oil, 1 tsp dried basil, 1/2 tsp garlic powder, 1/4 tsp pepper). So glad I found this via Pinterest–thank you!

    I’m assuming that when you say add the balsamic butter into the pan, you mean balsamic vinegar? Is that a typo? And how do you know when it’s reduced? What will it look like?

      Hi Keri! Yes, it is balsamic vinegar! The balsamic reduction will be thicker and a bit on the syrupy side when it has reduced. The liquid will have reduced by about half.

    Thanks! I actually wound up using the fresh mozzarella and it was delicious!! The only thing I will do next time is rub the chicken breast with a little oil and salt and pepper them. The flavor of the balsamic reduction was delicious and the combination of flavors was wonderful, but the chicken itself was a little bland (as chicken can be!). Thanks so much for the recipe, I’m on South Beach, and this fit in very nicely.

    WOW, Robyn!!! Made this for dinner tonight & it was everything you promised … easy, light, and very refreshing!!! I marinated my chicken for about 2 hrs in a balsamic/oil mixture before grilling it, which added extra moisture to the chicken. Will definitely be making a lot more! Thanks for the great recipe!

    Do you use fresh mozzarella (packed in water) or the blocks of mozz you find with the other sliced cheeses in the dairy case? I can’t wait to try this tonight!

      I use mozzarella from the dairy case. It is not already sliced, but I’m sure that type would taste wonderful as well.

    Oh my gosh Robyn… that made me smile so much. My oldest just got her first big kid bike and it has streamers on the handles. I think that’s an absolute must for girls for some reason lol. This dish sounds fantastic… I looove chicken in any way possible.

      GREAT dish – easy, fast, easy cleanup. this was a big hit with my husband and 22 year old daughter. Tomatoes and basil from the garden – light, flavorful sauce. Definately going to be a weekly dish every summer.
