How Many Pounds of Turkey Breast Per Person?

  • Plan 1/2 pound of turkey per person for boneless turkey breast, and 3/4 pound for bone-in turkey breast.
  • If you want leftovers, consider increasing the amount per person or the number of servings to get the amount you want. Great in Turkey Salad, Turkey Pot Pie, and more.

My recipe is for a 4 to 5-pound boneless turkey breast and yields 8 to 10 servings.

Ingredients

Be sure to see the recipe card below for the full listing of ingredients, instructions, notes, and estimated nutritional information.

  • Turkey Breast: Boneless with the skin on for crispy results.
  • Butter: Salted butter, melted to baste turkey.
  • Salt: Kosher salt for seasoning
  • Pepper: Freshly ground for flavor.

Ingredient Swaps

  • Butter: Use olive oil for a dairy-free option.
  • Seasoning: Use Stone House Seasoning (1 tsp) instead of salt and pepper; or add 1/2 tsp of garlic powder, or herbs like dried thyme for varied flavor.
  • Bone-In Turkey Breast: Use a 6-7 lb bone-in; adjust cooking time to about 20 minutes per pound, or until the internal temperature reaches 165ยบF with a meat thermometer.

How to Make the Best Roast Turkey Breast

Recipe Variations

  • Garlic Butter Roasted Turkey Breast: Use 2 cloves minced garlic and mix with 4 tablespoons of softened butter (omit melted butter), salt, and pepper. Spread the butter mixture on the breast and bake as directed.
  • Herb Roasted Turkey Breast: Use 1 tablespoon chopped fresh rosemary, 1 tablespoon chopped fresh thyme, 4 tablespoons softened butter (omit the melted butter), salt, and pepper. Spread the butter mixture on the turkey and bake as directed.

Recipe Success Tips

  • Thawing Tip: If frozen, place turkey on a rimmed baking sheet to thaw in the fridge overnight to avoid leaking juices.
  • Pat Turkey Dry: Remove moisture on the turkey breast before seasoning for crispy skin.
  • Check with Thermometer: Avoid overcooking by using a meat thermometer to check the temperature at 165ยบF.
  • Rest Before You Slice: Let the roasted turkey rest to redistribute juices before slicing for the juiciest turkey.
  • Roast in a Skillet: Holds temp well, yields a crispy-skinned, tender, and juicy turkey breast, gives delicious, savory juices (pan drippings).

Storage Tips

  • Store: Cool completely, place into an airtight container, and refrigerate for up to 4 days. Serve cold or reheat and serve.
  • Freeze: Place sliced, portioned, and cooled turkey into an airtight, freezer-safe container and freeze for up to 2 months. Thaw in the refrigerator overnight.
  • Reheat: Warm in a 350-degree oven for 10-15 minutes until heated, or microwave gently.
  • Make-Ahead Tips: Season and refrigerate overnight or up to 24 hr; roast the next day.

  1. nancy says:

Would like to make this for the 2 of us. My question is, why the high temperature? Thanks, Nancy

    1. Robyn Stone says:

Nancy, this temperature has worked well for me for a quicker baking time. If you want to bake at a lower temperature, you can bake a 4-6 pound turkey breast at 325ยบF for 1 1/2 โ€“ 2 1/4 hours. I hope you enjoy!

  2. indianhill says:

can I put bread dressing underneath the turkey breast and roast it together ?

    1. Robyn Stone says:

My cornbread dressing is very moist and tender and will not be firm like a stuffing. I would not recommend using it as a stuffing inside the turkey or underneath the turkey bread but should be cooked in a casserole dish separately.

Thanks, Dorothy. I hope you and your family enjoy!

  4. Anne says:

Iโ€™m cooking 2 turkey breasts. Any idea how long to cook?

    1. Robyn Stone says:

The cooking time should remain about the same as cooking the one breast, Anne, if they are about the same size. Make sure the internal temperature reaches 165ยบF to make sure they are done. Hope you enjoy!

  5. Newell says:

Can I use a stainless steel skilet

  6. Earth says:

I just bought a turkey breast with rib meat. I have no idea if that means it is boneless or what… lol Would it be the same recipe for a breast with rib? TYIA

    1. Robyn Stone says:

Yes, it will work just fine. Hope you enjoy it! Thanks!

  7. Meagan Young says:

    Hi there!ย

I was wondering if I should brine my turkey breast. Iโ€™ve never made a turkey or any part of it before, but Iโ€™m happy to have found this recipe!ย

And do you have a gravy recipe?ย

    1. Robyn Stone says:

      Hi Meagan,
I just make it exactly by the recipe given. I do not brine this. I do have a delicious Make Ahead Turkey Gravy Recipe. I hope you enjoy! Thanks!

  8. Diana says:

I am making this for me and my husband for Thanksgiving, 2018. It is just the 2 of us so it will be perfect. Thanks for the recipe. ๐Ÿฆƒ

Happy Thanksgiving! I hope you enjoy it! xo

  9. Mary Linn says:

This recipe looks delicious, and easy enough for even me to be able to do. Question, do you cover the skillet with aluminum foil or leave open the entire time? Also can you use a regular Skillet if I do not have a large size of cast iron skillet?

    1. Robyn Stone says:

      Hi Mary,
I only tent with foil after removing from the oven. I leave tented for about 15 minutes. Any oven safe skillet will work. Enjoy!
