But seriously. The topping of toasted coconut immediately grabs your attention when you first see them and then as you dig into them with your fork, you see the bits of coconut and specks of lime zest mingling throughout the waffle itself. Talk about heaven!

  1. These should be called Amy’s Waffles, because if I had a food named after me I’d want it to have coconut and lime in it. These are perfect!

  2. Hi, I just found this recipe on pinterest this weekend and I made them Sunday night for our breakfast for dinner. Wow! They were SOOO good and so different from basic waffles. I love the flavor combination and will definitely be making them again!! Thank you so much!

  3. I wanted to let you know I tried this recipe recently, but I made it for me and my friend who is gluten free. She also is not a huge fan of shredded coconut. My solution was to make the recipe using 1 3/4 cups of the Americas Test Kitchen gluten free all purpose flour blend and 1/4 cup of coconut flour. I also used half melted butter and half melted coconut oil to try to give it more coconut flavor. It was super tasty and we both enjoyed it a lot.

  4. I made these this morning and they were amazing! My boyfriend said they were so good he “felt like he was being hugged from the inside”. Thanks for the recipe!
