Throughout the summer months, ice cream seems to be one of our favorite desserts to make and to eat! We have so many favorite homemade ice cream recipes and love to keep it interesting with new flavors and combinations.

As part of our affection for ice cream, we love to have them as fun ice cream sandwiches!

For these, I used my peanut butter chocolate chip cookie recipe that I whipped up for Sam’s Scout troop meeting the other day. He loved the cookies so much from the meeting, he asked me if I’d make some for him for home. Now if you are anything like me, that is the biggest compliment you can receive and totally made me second guess my desire to be the “fun Mom” for his meeting planning purposes! Ha!

So, once I had another batch of those cookies, I decided that they sure would be amazing for an ice cream sandwich. While you can easily just use your favorite store bought ice cream in these, I decided to take them all the way by making our favorite old fashioned vanilla ice cream to go with them. Heaven.

Let me just say, if you have a peanut butter and chocolate fan in your house coupled with an ice cream lover, then you will definitely want to make these! Definitely!

To make these ice cream sandwiches, you can make the cookies and the ice cream ahead of time and then just assemble them later. The only risk in this is that the cookies and the ice cream get eaten before you get the chance to assemble them!

Wait, is that only in my house?

When you assemble them, you know you’ll have to work quickly since you are working with ice cream. I like to make sure that I have all of my ingredients and needed items at hand before I begin. I also like to work right beside my freezer so that I can easily pop the baking sheet into the freezer and then just add the ice cream sandwiches to it as I make a few. It sure works for me!

Peanut Butter Ice Cream Sandwich Recipe

Prep Time: 15 minutes
Total Time: 15 minutes
Servings: 12 ice cream sandwiches

Instructions 

  • Bake peanut butter chocolate chip cookies according to recipe instructions. Allow to cool completely. Prepare old fashioned vanilla ice cream recipe according to recipe instructions.
  • Place a large scoop of ice cream on the bottom of one cookie and carefully spread to the edges of the cookie. Top with a second cookie and press gently to make sure secure while not damaging the cookie structure.
  • Place prepared ice cream sandwich on a parchment lined rimmed baking sheet. Working quickly, repeat until all sandwiches are made. Cover tightly with plastic wrap and place into the freezer for at least 15 minutes for the ice cream to become firm. Once completely firm, remove from the baking sheet and place into an airtight freezer-safe container. Return to the freezer for up to 2 months.

Notes

Ice Cream Sandwiches should be stored in a freezer-safe airtight container. They should keep well in the freezer for up to 2 months.
While assembling the ice cream sandwiches, place them in the freezer if they begin to melt.

    I love making ice cream sandwiches. For my son’s birthday in December we made peppermint ice cream and soft brownie type cookies. Big hit.

    I haven’t done PB cookie sandwiches yet…..now I will have to.
