Since we’ve been talking about simple recipes using my slow cooker chicken method, I just knew I had to share one of the quickest lunch or supper recipes that we just love – Simple Chicken Nacho Salad
Now, I’m going to go ahead and tell you, this is such a quick and easy recipe and definitely one that you can switch out ingredients to your family’s favorites. You can even pour melted cheese over the top instead of using a shredded cheese. But, since it’s been so hot around here lately, I wanted to go with this cold cheese version.
Here’s how I pull together this amazingly quick, delicious chicken nacho salad, a 10 minute meal.
Simple Chicken Nacho Salad Recipe
- 4 cooked chicken breasts chopped
- 2 cups tortilla chips
- 4 cups lettuce
- 1 (14.5-ounce) can black beans rinsed well
- 2 tomatoes quartered
- 2 cups shredded cheese
- 1/4 cup sour cream
- 1/2 cup ranch dressing
- 3 tablespoons salsa
- Assemble ingredients for salad. Top with shredded cheese, sour cream and then dressing.
- To make dressing, mix together ranch dressing and salsa.

Our family will love this salad! Since we grow avocados on our family farm in So. California, we put avocado on almost everything…so guess what’s going on top of this delicious salad! Avocado! 🙂
