MEAL PLAN TIPS:
Saturday:
Easy Bruschetta Chicken: This delicious chicken is always a favorite! It is ready in less than 30 minutes, but I will prep the Balsamic Glaze ahead. I often keep it made and in the fridge. With just a handful of ingredients, you’ll have dinner on the table in a snap!
Sunday:
Bacon Wrapped Meatloaf: This favorite meatloaf is simple to mix up earlier in the day and refrigerate until time to bake. My family loves the leftovers from this meatloaf too!
Slow Cooker Mashed Potatoes: So easy to get started in the slow cooker early in the day! You can also make ahead and reheat, or use my recipes for Instant Pot Mashed Potatoes or stovetop recipe for Easy Mashed Potatoes.
Homemade Yeast Rolls: You can use store bought yeast rolls if you want, but I hope you try these scrumptious rolls from my cookbook today or sometime soon. They are delicious – and they are freezer friendly!
Tuesday:
Fish Tacos with Homemade Taco Seasoning: These tacos are such a delicious and quick family fave that could not be any easier! One thing I do is keep some of my Taco Seasoning made and stored in an airtight container. I love to go ahead and prep all of the veggies and the pico de gallo ahead of time. I also mix together the sour cream and sriracha ahead and store in the refrigerator for up to a week. My Salsa is ready in minutes, but I keep some in the fridge because we eat it so much!
Wednesday:
Shrimp Scampi: I love that this family favorite is ready in 15 minutes! The pasta can cook the same time as the shrimp, making this such a quick and easy weeknight meal! And this supper is elegant enough for entertaining too!
Thursday:
Chicken Salad with Grapes: To get a head start, I like to cook the chicken ahead of time in the slow cooker. Having the chicken made ahead makes this much loved dish such an easy favorite dish to make!
Have a great week!
