Saturday: Rosemary Chicken Salad with Rosemary Ranch Dressing + Salted Double Chocolate Chunk Cookies ( Make Ahead, 30 Minutes)
Sunday: Creole Shrimp and Grits + Strawberry Shortcakes with Sweet Cream Cheese Biscuits(from Add a Pinch Cookbook) (30 Minutes)
Monday: Leftovers
Tuesday: Chicken Enchiladas + Cilantro Lime Rice + House Salad (Slow Cooker, Make Ahead, 30 Minutes)
Wednesday: Slow Cooker Pepperoncini Roast + House Salad + Skillet Brownie S’Mores (Slow Cooker, Make Ahead)
Thursday: Baked Salmon with Parmesan Herb Crust + Air Fryer Baked Potatoes + Oven Roasted Asparagus (30 Minutes)
Friday: Family Night Out
MEAL PLAN TIPS:
Saturday:
Rosemary Chicken Salad with Rosemary Ranch Dressing: If you wish to make ahead, all of the ingredients can be prepared ahead and stored in the refrigerator for up to a week, making it easy to make this salad for a quick supper. I recommend storing the ingredients in separate air tight containers to preserve their freshness. This dressing is absolutely delicious, so I’ve been keeping some of it on hand in the refrigerator!
Sunday:
Creole Shrimp and Grits: This is a definite go-to recipe in the cookbook! I’ve already prepped all of the veggies for this dish and will use the slow cooker method for my grits. It is a family favorite dish I think you’ll enjoy too!
Tuesday:
Chicken Enchiladas: Supper is easier tonight since I’ve cooked my chicken ahead in the slow cooker. I also keep my homemade Enchilada Sauce on hand that I’ll use in these delicious enchiladas!
Wednesday:
Slow Cooker Pepperoncini Roast: This flavorful dish could not be any easier! Put just a few ingredients in your slow cooker in the morning, then assemble your sandwiches for supper! So easy and so full of flavor! I usually keep a House Salad mixed up in the fridge for easy suppers, so it’s simple to add salad to the meal.
Thursday:
Baked Salmon with Parmesan Crust: A definite favorite in my family! To make prep go even faster, go ahead and grate your Parmesan cheese and chop your parsley. Store them in separate airtight containers in the refrigerator and just grab and use when cooking. This delicious salmon bakes in no time and is always a favorite – it’s even great for serving guests too! The Air Fryer Baked Potatoes are a snap to make in a jiffy in your air fryer – or so easy to make Perfect Baked Potatoes in the oven if you don’t own an air fryer. The Oven Roasted Asparagus makes another simple, tasty side dish. This meal comes together easily, making this a perfect weeknight supper!
