I love to play around with my waffle recipe as the seasons begin to change. It is one of the perfect dishes to incorporate new tastes and flavors. One thing that immediately comes to mind beginning in September through early spring is apple cider. We go through more apple cider during those months than we do any other drink, besides coffee and water, of course. We just can’t get enough of it – cold straight out of the refrigerator or warmed in a mug late in the afternoon – it is always welcome. So the other morning, I decided to forgo my normal waffle recipe and make an Apple Cider Waffle recipe instead.
Oh my stars were they perfection on a plate and just right for this time of year.
These waffles fall into the category of not too much, as in they are not an ‘in-your-face’ kind of heavy on the spice sort of recipe.
But, not too little either.
They are juuuuussssst right.
I served them with warm maple syrup, a little bit of butter, and a large glass of apple cider to finish them off.
And finish them off we did.
Here’s my recipe for Apple Cider Waffles. I hope you enjoy them as much as we do.
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- pinch of salt
- 1 teaspoon sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 egg
- 1 cup apple cider
- Preheat waffle iron and spray with nonstick cooking spray.
- Whisk all dry ingredients together and add egg and apple cider. Whisk until well-combined.
- Pour into waffle iron and prepare according to waffle iron instructions.
- Remove from waffle iron when baked throughout and serve warm.

Just made these this morning (with whole wheat pastry flour) and LOVED them! I brushed a bit of canola oil on the hot iron, and the waffles came out perfectly crisp on the outside and fluffy & light on the inside. Thanks for a fantastic waffle recipe =).

I made these the other day for breakfast and got lots of compliments! I added some chopped apple pieces into the batter and served with cinnamon whipped cream.
