How to Make Air Fryer Potato Wedges Recipe

Ingredients

  • Potatoes – I use and recommend using Russet potatoes. They have a nice crispy exterior and fluffy interior when cooked and are so delicious!
  • Olive oil – the olive oil helps the potatoes have that signature crispy exterior while keeping the potato wedges from sticking to the air fryer basket as they cook.
  • Seasoning – I love to use my Stone House Seasoning which is my go-to house seasoning for so many recipes. If you don’t already have a batch of it made, for each teaspoon of seasoning you’ll need: 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper, and 1/4 teaspoon granulated garlic. You can also use other favorite seasonings listed below under Recipe Variations.

Step-by-Step Instructions

  1. Prep. Preheat the air fryer to 400º F. Wash potatoes and cut them into wedges. Pat the potatoes dry with a paper towel.
  2. Season the potato wedges. Place the cut potato wedges to a mixing bowl. Drizzle in the olive oil and sprinkle with the Stone House Seasoning. Toss to coat all of the potatoes.
  3. Cook. Place the seasoned wedges into the air fryer basket or tray, making sure not to crowd them so air can properly circulate around them. Cook at 400º F for 8 minutes, then flip the potato wedges and cook for another 7 minutes until the potato wedges are golden brown and fragrant.
  4. Serve. Remove the potato wedges from the air fryer and serve warm.

Prep the potatoes

Pat the potato wedges dry with a paper towel before seasoning them to make sure the seasonings adhere well to the potatoes.

Recipe Variations

  • Cajun Potato Wedges – use Cajun Seasoning to taste.
  • Ranch Potato Wedges – use Ranch Seasoning to taste.
  • Parmesan Potato Wedges – add 2 tablespoons of freshly grated Parmesan cheese to the potato wedges when removed from the air fryer.
  • Tex Mex Potato Wedges – add Taco Seasoning to taste.

Storage Tips

To store. Store leftover potato wedges in an airtight container in the refrigerator for up 3 days. Reheat heat them in an air fryer or on a baking sheet in a 400º F oven until heated throughout and crispy, about 10 minutes.

To make ahead. Prepare the potato wedges and store in the refrigerator following the directions under To store. Reheat and serve.

To freeze. Cook and cool completely. Store in a freezer-safe, airtight container in the freezer for up to 3 months. To serve, reheat in a 350º F oven until heated throughout, about 15 minutes.

Frequently Asked Questions

Do potatoes have to be in a single layer in the air fryer?

For the crispiest air fryer potates, make sure that they are in a single layer without touching. This allows the air to fully circulate around the potatoes as they cook yielding the crispiest air fryer potatoes!

Do you have to soak your potato wedges before cooking in the air fryer?

No. Soaking your potato wedges is not required to have crispy potato wedges in the air fryer! Simply pat the cut potatoes wedges dry with a paper towel before seasoning them and air frying them.

What type of air fryer do you use?

For recipe testing purposes, I actually have three different types of air fryers. I have an Instant Pot Air Fryer, a Cuisinart countertop oven-type air fryer, and my oven has an air fryer setting on it as well. I test air fryer recipes using all types of air fryers before publishing them on the website. You’ll notice these photos are made with potato wedges on a metal basket. This is from the countertop oven-type air fryer.

  • 1 tablespoon olive oil
  • Stone House Seasoning, to taste
