These simple buttered potatoes are a throwback to my youth. Mama would make them at least once every other week to go with meatloaf, chicken, or even her skillet pork chops. It was a staple, for sure. And I never got tired of it. Not even a little bit.

There was one part of my Mama’s buttered potatoes that I never enjoyed and was always tired of though –  peeling!

It was always my job to peel the potatoes for boiling. To a young girl, it felt like I peeled endless pounds and pounds of potatoes. As many as I peeled, it seemed more and more were added to the pile. The mound never seemed to shrink any until Mama would come over with her sharp paring knife and within minutes have more potatoes peeled than I’d managed in the eons I’d been working on them. Fingers still griping the handle of the peeler, I swore when I grew up, I wouldn’t peel any more potatoes than I absolutely had to. That’s a promise I have tried my very best to keep, too.

So, instead of the large white potatoes that my Mama used, I tend to use small red potatoes so that I can leave the skin on them. You may think that’s lazy, I just think it’s brilliant.

Here’s how I make my buttered potatoes. If you decide to use large white potatoes, start those finger stretches now or enlist your children to help you like my Mama did.

  3. I never met a potato I didn’t like. Especially when they’re combined with lots of butter, salt, and pepper. Yum!

  4. We just got back from our honeymoon, and all we have are potatoes and onions in the fridge. I know what we’re having for dinner tonight!

    • Happy return-from-your-honeymoon-wishes!!! It’s a surreal feeling, isn’t it? Well, it was for me so many moons ago when my husband and I returned from ours. It was nice to settle in, but for the first time in a year, we had a little bit of time to ourselves. Enjoy!

  5. I have a love/hate relationship with peeling too. These look perfect to me!

  6. Love the easy potato recipe. Will be making this soon, but like your mama, I want mine peeled first! Thanks for this recipe.

  9. I’m heading out to the grocery store in a matter of minutes. This recipe, as simple as it might be to execute looks divine. I’m the type of person who never met a vegetable that I didn’t like, so this — quite natch, appeals to me.

All I can do is look at it and say… yummy!

  10. Totally brilliant, and the peel is where all the good-for-you stuff is anyway so your version is healthier 😛

  11. I’m always looking for a delicious way to use potatoes. The same ol’ same ol’ gets pretty boring. Definitely pinning this baby.

  12. If I double the potatoes do I double the boil time? Thanks!

    • Hi Judy,
Not necessarily. You’ll want to check the potatoes at the normal cooking time and then continue to check every 10-15 minutes until they are fork-tender.

  13. Hey Robyn! I love all of your recipes including this one too! But, I have a question, while making these potatoes do we have to peel the potatoes or just cut them into big pieces with the peel still on them? Thank you for everything! I love all of your cooking! Write back soon as possible!

  14. Studying for my exams at the moment and this is the perfect study break meal! I’ve got my potatoes cooking now!

  15. What a great and easy alternative to mashed potatoes. I added some bacon and fresh chives and loved it.
