Caprese Grilled Chicken with Balsamic Reduction Recipe – A favorite caprese salad takes center stage with this delicious grilled chicken!

Caprese Grilled Chicken with Balsamic Reduction Recipe - A favorite caprese salad takes center stage with this delicious grilled chicken! // addapinch.com

This year is flying by like when I was a little girl and would push my bike to the top of the hill on the road from my house to my grandparents.

It was the summer after the county had just put in a new coating on the asphalt road – you know the kind that is black and hard, but still has bumpy gravel. It would take me a little while to get up my nerve to push my bike to the top of that hill, then I’d climb onto the white seat, grip my handlebars with the streamers tied to them, and push off.

There was no way of stopping once my tiny foot left the ground. I was off, flying and giggling and feeling like butterflies were flittering away in my tummy the entire time.

Well, this year has felt a lot like that, too. So full of excitement and…. well… fun!

Caprese Grilled Chicken Recipe

It just seems like yesterday we welcomed spring and wiped the sleepies from our eyes the morning after we reset our clocks ahead. Now, we’re thinking of meals to celebrate the special men in our lives and wracking our brains for something special to give them.

I thought it would be a great time to share a recipe with you that I think would make a wonderful addition any summer celebration or a quick and easy weeknight meal – Caprese Grilled Chicken with Balsamic Reduction.

How to Make Caprese Grilled Chicken

Start by preparing chicken on the grill. As chicken is cooking, pour balsamic vinegar into sauce pan or skillet and cook until reduced by half. Add in butter and stir with a flat whisk until completely combined. Set aside.
Then top the grilled chicken with mozzarella cheese, basil leaf, and then a tomato slice.
Finally, drizzle with balsamic reduction and serve warm. Easy and delicious!

If you love caprese salad as much as I do, this chicken is going to become one of your favorite dishes, too. Think of it as a complete meal in one recipe, because really… it is. It is perfect for lunch or a light supper and makes a mighty impressive presentation, but you could add a side of asparagus or another vegetable to round out the meal.

  1. Oh my gosh Robyn… that made me smile so much. My oldest just got her first big kid bike and it has streamers on the handles. I think that’s an absolute must for girls for some reason lol. This dish sounds fantastic… I looove chicken in any way possible.

    1. Those streamers are my favorite thing I remember about my bike when I was little. They were glittery and flew in the air when I rode down the hill. I loved them something fierce!

GREAT dish – easy, fast, easy cleanup. this was a big hit with my husband and 22 year old daughter. Tomatoes and basil from the garden – light, flavorful sauce. Definately going to be a weekly dish every summer.

    1. Oh Emily, I’m so glad! I can’t wait to hear how you like it. It is definitely one of our favorites now!

  2. Wow, this looks amazing. I will eat anything with a balsamic reduction. Beautiful dish, Robyn!

    1. I’m with you on the balsamic reduction. I could eat it with a spoon! It makes this recipe sing, too!

  3. I was just thinking I wanted to try a new grilled chicken dish this weekend and then I saw your tweet. This is gorgeous, Robyn and I think it needs to be on my menu.

    1. Thanks so much, Dara! That means a ton coming for the Girl Grilling Queen!!! 🙂 I can’t wait to hear how you like it.

    1. Thanks so much, Missy. I bet your boys will gobble it up as fast as mine do. Happy weekend!

    1. I think you’ll love it, Paula! Those flavors are just perfection on a plate!

    1. Carbs and I are always doing battle and this is just the thing I need in my arsenal to not miss them! Hope y’all enjoy this as much as we do. It’s great on the smoker, too! It gives the mozzarella a bit of a smokey deliciousness for sure!

  4. Thinking of you on your bike put a smile on my face….thanks! The chicken looks absolutely gorgeous, all my favorite things in one dish!! Hope your family has a Happy Father’s Day!

  5. I’m making this today, with fresh green beans and fresh sweet corn. Can’t wait, so we may be eating early! 😉 Thank you!

    1. Oh Jan, that sounds like a delicious meal for today! I can’t wait to hear how you like it!

    2. Love, love, LOVED it! Quick, easy, and my new favorite way to make chicken breasts. I’m certain I’ll be making this often.

    3. YAY! I’m so glad you loved it, Jan!!! Isn’t it so easy? It’s a favorite of ours, too!

  6. Do you use fresh mozzarella (packed in water) or the blocks of mozz you find with the other sliced cheeses in the dairy case? I can’t wait to try this tonight!

    1. I use mozzarella from the dairy case. It is not already sliced, but I’m sure that type would taste wonderful as well.

  7. WOW, Robyn!!! Made this for dinner tonight & it was everything you promised … easy, light, and very refreshing!!! I marinated my chicken for about 2 hrs in a balsamic/oil mixture before grilling it, which added extra moisture to the chicken. Will definitely be making a lot more! Thanks for the great recipe!

    1. What exactly was your marinade? How much balsamic did you use and what kind of oil? Sounds like it would give it that extra moisture, like you said!

  8. Thanks! I actually wound up using the fresh mozzarella and it was delicious!! The only thing I will do next time is rub the chicken breast with a little oil and salt and pepper them. The flavor of the balsamic reduction was delicious and the combination of flavors was wonderful, but the chicken itself was a little bland (as chicken can be!). Thanks so much for the recipe, I’m on South Beach, and this fit in very nicely.

    1. Hi Samantha,
I like to serve a big salad, grilled asparagus, or another fresh vegetable as a side dish, too.

  9. I’m assuming that when you say add the balsamic butter into the pan, you mean balsamic vinegar? Is that a typo? And how do you know when it’s reduced? What will it look like?

    1. Hi Keri! Yes, it is balsamic vinegar! The balsamic reduction will be thicker and a bit on the syrupy side when it has reduced. The liquid will have reduced by about half.

  10. Wow…I’m not known for my creativeness in the kitchen, but this was a MAJOR hit! I used the little George Foreman grill and it turned out just great. Thanks so much for making me look (for one night at least) that I know what I’m doing in the kitchen. 🙂

  11. I made this tonight but our grill isn’t working now so I baked the chicken. We LOVED it, this will definitely become a regular in our dinner! That balsamic reduction was to die for!

  12. We loved this recipe–what a great idea! The only thing I did different was marinate the chicken for a few hours before as another commenter suggested. (1/2 c balsamic, 1/4 c olive oil, 1 tsp dried basil, 1/2 tsp garlic powder, 1/4 tsp pepper). So glad I found this via Pinterest–thank you!

  13. I just made this tonight and followed the recipe exactly as it is written. It is absolutely delicious! thank you

    1. Hi Deanna,
I can’t wait to hear how you and your friend enjoy it this weekend. It is a definite favorite with everyone that we make it for and we’ve served it a ton this summer. Enjoy and have fun at your friend’s house! Isn’t it the best thing ever to visit and cook together? Love it!

  14. I actually am in the process of making this chicken now….i really do hope it’s going to be great….we couldn’t find balsamic vinegar so i’m hoping that the balsamic vinaigrette will work…wish me luck 😀

  15. Omg I just went grocery shopping…. I have everything to make it so tomorrow night thus will be dinner… Cannot wait thank you

Loved this! I also did what a previous person said – bbq’d the chicken with olive oil, salt and pepper. Super easy and tasted great!

I made this tonight and it was YUMMY! My boyfriend is a picky eater and he gave two thumbs up! It’s a perfect summer recipe. I wouldn’t change a thing. I will be making this again! Thank you for posting this great recipe 🙂

  19. MMM this looks delicious. I marinated the chicken in buttermilk overnight ( which makes chicken tender and juicy no matter what you do to it. ) then sprinkled with onion powder, garlic powder, marjoram, oregano and salt and pepper. It’s sitting on the plate waiting for my husband to get home so we can grill it. 🙂 I think fresh corn on the cob will go nicely with this.

I baked my chicken instead of grilling due to the weather, and added some garlic since it wouldn’t be picking up that lovely grilled flavor. This was absolutely amazing! Thank you so much for sharing your recipe 🙂

Robyn – great recipe! I made this tonight and my husband wants me to make it again over the weekend. Thanks! – Laura

    1. Hi Lori,
I began estimating nutritional information for new recipes published in January 2018 and have not gone back to estimate on older recipes. As I do go back and update photos or anything on older recipes, I will update to include these estimates. I utilize My Fitness Pal’s recipe calculator for calculating my estimations.

  24. I’ve never been a fan of tomatoes, unfortunately, as I LOVE the flavors in a good Caprese. I think I’ll try to roast some red peppers and replace the tomato with them. This looks delicious and easy. Thank you.

I love this recipe! We no longer have a grill. My vegan husband made this on our gas kitchen stove for my birthday dinner last night. He used “chicken tenders” because they’re easier for him; fresh mozzarella (not buffalo) packed in lightly salted water from Trader Joe’s; fresh basil from the garden; and vine-ripened tomatoes. I looked all over for a recipe that used butter in the balsamic reduction! I remembered doing it that way last year and how much better it was. Found it here!! Thank you. I may have it again tonight! One tip I came across is to store your balsamic reduction in a squeeze bottle for easy use in other dishes.

  26. Love this recipe! We grill all year long, and this recipe looks so delicious. We’ll be trying this soon…thanks for sharing!
