Maybe it is because these sugar cookies are different from the rolled sugar cookie recipe we also love throughout the holidays. Those can seem a bit daunting at times while this chewy version of the sugar cookie comes together quickly and is just one of those perfect cookies you enjoy eating!

How to Make Perfect Sugar Cookies

For this sugar cookie recipe, I scoop the dough, roll it into a ball and then roll it into a bit of granulated sugar for a sparkly touch that lends a crisp little coating on the cookie once it is baked. While you can certainly skip that little step, I highly recommend that you not. It is so very much worth it.

This is by far one of my most requested cookie recipes throughout the holidays, but also throughout the year!

It is just that perfect chewy, soft sugar cookie recipe that everyone raves over! One thing that I also like to do is include these amazing sugar cookies as well as my chocolate sugar cookies on a cookie platter.

Talk about heavenly!

You’ll definitely want to keep this sugar cookie recipe in your list of must-make cookie recipes!

Did you make this recipe?

Ingredients

  • 1 cup butter, softened 2 sticks
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon Kosher salt
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar for rolling cookies

Directions

  1. Preheat oven to 350º F. Line cookie sheets with parchment paper or a nonstick baking mat.
  2. Cream together butter and granulated sugar until light and fluffy, about 3 minutes. Add egg and mix until well-combined.
  3. Stir in flour, baking powder, salt, and vanilla.
  4. Scoop cookie dough by the tablespoon full and roll into a ball.
  5. Add granulated sugar to a large bowl for rolling cookie dough in before baking. Place each ball of cookie dough into the bowl of granulated sugar and roll to coat well. Place cookie dough onto baking sheet, spacing about 1 1/2-inches to 2 inches apart. Lightly press each cookie down. Bake for 8 to 10 minutes or until lightly browned.

Notes

Be sure not to over beat your butter and sugar as you prepare your sugar cookie dough as it will beat too much air into the butter. This air, then when baking your cookies, will cause the cookies to rise and then fall flat.

  1. I’ve made this lots of times and each time I find my cookies are so fat . I love a flat cookie . What am I doing wrong ? Besides that this recipe is one of the most requested from me. Such a yummy and easy recipe . Thank you

    • Add more butter to make it flat! I would say only a table spoon. It takes trial and error but I hope you can get your favorite type of cookie!!!

  2. Hi Robyn,
I’m not the best cookie maker and I’d like to make these with my grandchildren.
Can this recipe be rolled out and cut into shapes?

    • Hi Leslie!
This Chewy Sugar Cookie is not the one that you cut into shapes. It’s easy and delicious too, though.
My Cut Out Sugar Cookie recipe is the one I use when I want to use my shaped cookie cutters to decorate. Hope you enjoy that time with your grandchildren – I’m sure they will love doing this! xo

  3. When it says butter does it have to be unsalted or salted

  4. Love these sugar cookies!  My grandson’s absolutele favorite.  Easy to make, so darn soft and chewy.  The only change I make is to add 1/4 teaspoon almond extract.  It adds a little something, an extra layer of flavor, that is amazing!  We make these almost every family get together and they are always a hit.  Thanks so much for posting this!!!!!

  5. Would not make again.   Way too flat. Butter flour ratio is off.

    • Sorry yours were flat, Tobie. I’ve not had that problem and the butter ratio is fine – I make them often. Sometimes if your butter gets too warm while handling the dough or before you mix them, it can cause them to not rise as they should. If that happens, you can just put the dough in the fridge for a few minutes and proceed after that. Thanks.

    • i have made these probably a doz times or so , they turn out fluffy and chewy. ( i sprinkle mine with a pinch of sugar prior to baking and i also add atouch of almond extract along side the vanilla.) fabulous !!

  6. Can I freeze these cookies?

  7. How much people does this serve?

  8. I followed this recipe adding a little extra.   I ninja’d up some chocolate covered almonds along with some Jordan almonds and semi sweet baking chocolate adding it to your recipe.  It was wonderfully awesome.  If you omit the Jordan’s. It would have s great similarity to pignoli cookies.

  9. I have made these cookies more than once and this recipe is my favorite of all sugar cookies.

  10. SO LIKE UMM… My cookies are not cookies anymore… kinda turned into a flat giant cookie proably too much butter.idk. but hey they taste good

    • I’m sorry they ran together, but I am glad you enjoyed the taste! I have not had that problem but it sounds as if they could have been placed too closely together. I hope that helps. Thanks

  11. These are my all-time favorite cookies. Every time my school has any sort of event, I am begged to make them. They are so good. This recipe is definitely a keeper.

  12. Absolutely addicted to these!

  13. Made these as a gift. They were well recieved and the comments were yummy my new favorite cookie!

  14. I made these yesterday and turned out perfect! Although I replace granulated sugar with cane sugar and used 1 cup sugar instead of 1 1/4 cups.

  15. The best sugar cookies.yum!

  16. Easy to make and bake. Tasted great would recommend and bake again! Only problem is they don’t have the texture of the picture attached. -1 Star.

  17. Thank you for this amazing recipe! It was very fragile right out of the oven, but it tasted wonderful. My kids devoured them all. I added food coloring and baked rainbow cookies with sprinkles on the outside. The added crunch gave it some texture, which I liked. Not only were my cookies colorful, they were so delicious! Thanks again!!!

  18. Excellent recipe. Though
Thoug I had to use normal non whole purpose flour, and added a tablespoon cocoa, the result was marvelous.

  19. Really is the best sugar cookie recipe! Simple ingredients, chewy and delicious… got devoured right away.
I did have to bake them for a couple extra minutes though – altogether probably about 12. Might be my oven though :/

  20. So we need 2 sticks of butter and 1 cup of butter? I just want to make sure I do them correct.

  21. Great cookies my daughter loves them

  22. Hi Robyn, these cookies look delicious and I want to make them for my granddaughters. What butter substitute would you recommend as one of my granddaughters cannot have any butter products due to an allergy to the casein in the butter. Is sunflower oil a good substitute for the butter. Thanks so much!

  23. Hands down, these have become my all time favorite cookies.  Which is just horrible for my diet if I bake a whole batch!
I portion them using a 2tsp scoop, roll in sugar, then crowd (seriously, only rule is that they don’t touch) them onto a parchment lined cookie sheet and pop them in the freezer. After 3-4 hours, I move them into a freezer bag.
When it’s time for my evening treat, I preheat the oven to 350 and then put the frozen dough onto the lined pan and cook for the 10 minutes, turning at the halfway mark to avoid any uneven heating in the oven.  The smaller portions mean I can cook from frozen at the original time listed in the recipe *and* they don’t over spread.  Perfect every time and, since I only bake what’s going to be eaten by the household that evening, it keeps Us from over indulging.
It also means I can prep ahead for potlucks.  Make a double batch on the weekend before, and bake the night before.

  24. I thought these recipe is excellent and simple. I like it because they were so easy and no need refrigerat for hours. The flavor was awesome I added paste vanilla and they tasted great. My husband and grandchildren loved them

  25. THE BEST is not an understatement. We were trying to find another recipe for a cookie day at work and decided to go with these and they did not disappoint. I had a colleague say before she tried one, “I will be honest, I am not a sugar cookie fan”…then you should’ve seen her face! She was so impressed and so was everyone else. Very light and fluffy, with a punch of flavor. I think the little bit of saltiness at the end really makes the cookie.
Thanks so much for this recipe, it is now in my recipe book but with the name “The ABSOLUTE Best Chewy Sugar Cookies”.

  26. I made these sugar cookies for my family and they LOVED them!! This is the best sugar cookie recipe I’ve ever tried! They are perfectly moist on the inside, and holds together wonderfully. Thanks so much for sharing this great recipe. 😀

  27. Delicious and truly chewy. Great recipe!

  28. truly the best sugar cookie recipe i’ve ever made. chewy center for days and the slightest crunch on the outside….wont ever look for a new sugar cookie recipe again!Have made them for gifts, for parties, for my boys…in shapes and regular circles…They turn out great every time! Thanks so much..

  29. Delicious and perfectly chewy. This one is a keeper!

  30. cookies went very flat. refrigerating the dough before rolling and cooking should be a step

  31. Wonderful buttery not too sweet yummy cookies!!!!!❤️

  32. I added about 2oz of cream cheese at the first step. They are even more delicious than the first batch. This is definitely my go recipe now. Thanks!

  33. Amazing recipe! I make these sugar cookies every Thanksgiving. Crispy and crunchy on the edges, and soft and chewy on the inside.

  34. This is my go-to sugar cookie recipe! I looove the crisp outside & chewy inside, I make it every year at Christmas & for a fruit pizza crust also!!

  35. Mine did not turn out. When i cooked them the butter ran out of them and they did not flatten.  I am not sure what i did wrong.  Do i need to alter the flour?  The dough was also dry and crumbly.

    • Hi Sarah,
I’m sorry that your cookies didn’t turn out. I’ve not had this happen and can’t be sure why it did exactly but it sounds as if the butter may have gotten too warm while working with the dough. You can put them back in the fridge for a few minutes before continuing to roll the cookies. You won’t make any changes to the recipe itself. Hope this helps. Thanks!

  36. My grandchildren and my daughter LOVED these cookies. I am making more today but my grandsons have requested I put their names on separate containers as their mom is taking to many to eat herself😹

  37. I love these cookies and have made them twice. I doubled the recipe because my grandchildren love them. I am having an issue though, they seem so dry and difficult to form into a ball?  Am I doing something wrong?  I have read over and over the ingredients and not missing anything but still dry and hard to form into ball for cookie sheet…help They do taste good though after finally completing baking

    Judi

    • Hi Judi,
I’m so happy you and your grandchildren enjoy the cookies! I’m sorry but I’m not sure what is causing them to be dry – I haven’t had that happen. I am wondering if it has to do with the double batch. I think if you try mixing the dough one recipe worth at a time, that might help keep the butter in the dough mixture at the best temperature for forming the dough into balls. I hope this helps!
      Thanks! xo

  38. Should I use salted or unsalted butter?

  39. These are AWESOME.  My niece was a little down because she was too young to go to baking camp with her sister, so I told her we can do our own baking and ended up making these cookies.  They were perfect.  Nice and chewy and not overly sweet.  We ate one whole sheet of cookies within 10 min.  And the best part was she forgot all about baking camp.

    • This is the sweetest thing I’ve read all day! I LOVE that you had your very own “baking camp” with your young niece! I’m so glad you both enjoyed the cookies! And by the way, nieces are so special, aren’t they?!!!
I’m sure you’ve made memories for her that probably even surpass those she would have gotten at the other “camp”. I am thrilled you shared this memory with me! Thank you! xo

  40. This is the absolute best recipe ever. I have never baked this many of anything in my life. No matter the time or the occasion, I get asked all the time for these cookies. Everyone I know loves them. I’ve done these for bake-sales for my sister, work snacks for my dad, get-togethers for my mum and parties with my friends. Anytime there is a need to bake, I do these cookies. And they have been perfect every time.

Thank you so so so much for this recipe! They are absolutely the most amazing ever!

  41. can I use whole wheat flour instead of white flour?

  42. I made about 4 dozen cookies for our troops.🇺🇸🇺🇸🇺🇸🇺🇸 I iced some and sprinkled some. They were the best. Saved a few for me 😊 I will be making them again for our troops this November.

    • What a kind gesture, Carol! I am so sure that they appreciate you baking cookies for them! I’m glad you enjoy the cookies – and I’m so happy you shared this with me! Thanks so much for that! xo

  43. Gonna make some more now. Gonna make someone very happy. 😍 fantastic cookies. Nom nom.

  44. Can you use regular salt instead of Kosher Salt?
