I love a fresh, homemade apple cake this time of year. But, in all reality, I love them anytime of year. They are simply hard to beat in my book. My apple cake recipe uses apples that I’ve grated on the largest hole of the box grater. I find that the grated apple mixes well in the cake batter to give you that fresh apple taste throughout. If you don’t have a box grater, you can simply dice your apple pieces really well and use those instead. But, if you can possibly, I definitely recommend grating your apples for this cake recipe. So good!

The spiced apple cider glaze that I used on this apple cake recipe is also one of those things that you can skip if for some reason you prefer to do so, but I highly, highly, highly recommend that you not skip it. It is out of this world!

An apple cake recipe filled with apples, apple pie spice and so much more. This apple cake recipe is easy to make and a year-round favorite!

Cook Time: 1 hour
Total Time: 1 hour 10 minutes
Servings: 16 slices

Ingredients

  • 1 cup (226 g) butter, softened
  • 2 cups (426 g) brown sugar
  • 3 large (150 g) eggs
  • 3 cups (360 g) all-purpose flour
  • 3 teaspoons (12 g) baking powder
  • 1/4 teaspoon (0.65 g) kosher salt
  • 2 teaspoons (5.72 g) apple pie spice
  • 2 medium (334 g) Granny Smith apples, peeled and grated on large hole or box grater
  • 1 1/2 teaspoons (7 g) vanilla extract
  • 2 cups (454 g) buttermilk

For the Spiced Cider Glaze

Instructions 

  • Preheat oven to 350ยบ F. Spray bundt pan with nonstick baking spray or brush with homemade cake pan release (cake goop). Set aside.
  • Cream together butter and brown sugar until light and fluffy, about 3 minutes. Add in eggs, one at a time and incorporate completely before adding another.
  • Whisk together flour, baking powder, salt, and apple pie spice in a medium bowl. Reduce speed of mixer to low and spoon flour into wet batter. Stir in grated apples, vanilla and buttermilk.
  • Pour cake batter into prepared bundt pan and place in oven. Bake 60 minutes or until skewer comes out clean when inserted in cake. You can follow my tips forย how to tell when your cake is done.
  • Remove from oven and allow to sit for about 10 minutes. Turn out onto cake plate and stop with glaze or serve without.
  • Spiced Cider Glaze
  • Whisk ingredients together until smooth. Spoon over cake.

    Approximately how many cups of grated apples does this recipe require? I have these abnormally large granny smiths and think one might be equal to two medium apples.

    Hi,

    I love your recipes, tried the apple cake a few times earlier and it was perfect ๐Ÿ™‚ Thanks !!! however facing a peculiar for last couple of times. The cakes comes out perfect, the toothpick test is clean etc. But I cut to eat it eventually which could be 7-8 hours later the cake is hard and feels a bit raw.

    Any idea why this would happen. Thanks much

      Hi Aarti – Could it possibly be that you are using a different type of apple or any other different brands of ingredients this last couple of times you’ve made the cake? I’m not sure what could be happening since you say it turned out perfect for you earlier times you made it. Sorry I don’t know the answer, but I hope this helps. Thanks so much!

      Definitely not enough moisture!! Try 3-4 tablespoon of the cider to the one cup of powdered sugar.

    I made this cake today. It embodies the flavors of fall. I love it! Easy and delicious! This is a cake I Will make again and again to take to cookouts or family get togethers or just because.

    I noticed that the liquid for (1 tsp) for the glaze was not enough. I just added enough milk until it was a glaze.

    Is the 1 teaspoon apple cider correct? There is not enough liquid to make a glaze. Or, are you suppose to sift the powdered sugar on the cake?
