Maybe it is because these sugar cookies are different from the rolled sugar cookie recipe we also love throughout the holidays. Those can seem a bit daunting at times while this chewy version of the sugar cookie comes together quickly and is just one of those perfect cookies you enjoy eating!

How to Make the BEST Sugar Cookies

For this sugar cookie recipe, I scoop the dough, roll it into a ball and then roll it into a bit of granulated sugar for a sparkly touch that lends a crisp little coating on the cookie once it is baked. While you can certainly skip that little step, I highly recommend that you not. It is so very much worth it.

This is by far one of my most requested cookie recipes throughout the holidays, but also throughout the year!

Make-Ahead Sugar Cookies

For an easy make ahead sugar cookie recipe, prepare your sugar cookie dough, through rolling in the sugar, and place onto a parchment lined baking sheet. Place into the freezer and freeze for 30 minutes. Transfer your cookies to a freezer-safe zip top bag and store in the freezer for up to 3 months.

When ready to serve, simply remove from the freezer-safe bag and place onto a parchment lined baking sheet. Bake as directed, adding about 3 minutes to the baking time.

  • 1 cup butter, softened 2 sticks
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon Kosher salt
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar for rolling cookies


  • Preheat oven to 350º F. Line cookie sheets with parchment paper or a nonstick baking mat.
  • Cream together butter and granulated sugar until light and fluffy, about 3 minutes. Add egg and mix until well-combined.
  • Stir in flour, baking powder, and salt until well-combined. Stir in vanilla.
  • Scoop cookie dough by the tablespoon full and roll into a ball.
  • Add granulated sugar to a large bowl for rolling cookie dough in before baking. Place each ball of cookie dough into the bowl of granulated sugar and roll to coat well. Place cookie dough onto baking sheet, spacing about 1 1/2-inches to 2 inches apart. Lightly press each cookie down. Bake for 8 to 10 minutes or until lightly browned.


Be sure not to over beat your butter and sugar as you prepare your sugar cookie dough as it will beat too much air into the butter. This air, then when baking your cookies, will cause the cookies to rise and then fall flat.

  1. I’ve made this lots of times and each time I find my cookies are so fat . I love a flat cookie . What am I doing wrong ? Besides that this recipe is one of the most requested from me. Such a yummy and easy recipe . Thank you 

    • Add more butter to make it flat! I would say only a table spoon. It takes trial and error but I hope you can get your favorite type of cookie!!!

    Can this recipe be rolled out and cut into shapes?

      This Chewy Sugar Cookie is not the one that you cut into shapes. It’s easy and delicious too, though.

Love these sugar cookies!  My grandson’s absolutele favorite.  Easy to make, so darn soft and chewy.  The only change I make is to add 1/4 teaspoon almond extract.  It adds a little something, an extra layer of flavor, that is amazing!  We make these almost every family get together and they are always a hit.  Thanks so much for posting this!!!!!

  5. Would not make again.   Way too flat. Butter flour ratio is off. 

    • Sorry yours were flat, Tobie. I’ve not had that problem and the butter ratio is fine – I make them often. Sometimes if your butter gets too warm while handling the dough or before you mix them, it can cause them to not rise as they should. If that happens, you can just put the dough in the fridge for a few minutes and proceed after that. Thanks.

    • i have made these probably a doz times or so , they turn out fluffy and chewy. ( i sprinkle mine with a pinch of sugar prior to baking and i also add atouch of almond extract along side the vanilla.) fabulous !!

  8. I followed this recipe adding a little extra.   I ninja’d up some chocolate covered almonds along with some Jordan almonds and semi sweet baking chocolate adding it to your recipe.  It was wonderfully awesome.  If you omit the Jordan’s. It would have s great similarity to pignoli cookies.

  17. Thank you for this amazing recipe! It was very fragile right out of the oven, but it tasted wonderful. My kids devoured them all. I added food coloring and baked rainbow cookies with sprinkles on the outside. The added crunch gave it some texture, which I liked. Not only were my cookies colorful, they were so delicious! What butter substitute would you recommend as one of my granddaughters cannot have any butter products due to an allergy to the casein in the butter. Is sunflower oil a good substitute for the butter. Thanks so much!

  23. Hands down, these have become my all time favorite cookies.  Which is just horrible for my diet if I bake a whole batch!
    I portion them using a 2tsp scoop, roll in sugar, then crowd (seriously, only rule is that they don’t touch) them onto a parchment lined cookie sheet and pop them in the freezer. After 3-4 hours, I move them into a freezer bag.
    When it’s time for my evening treat, I preheat the oven to 350 and then put the frozen dough onto the lined pan and cook for the 10 minutes, turning at the halfway mark to avoid any uneven heating in the oven.  The smaller portions mean I can cook from frozen at the original time listed in the recipe *and* they don’t over spread.  Perfect every time and, since I only bake what’s going to be eaten by the household that evening, it keeps Us from over indulging.
    It also means I can prep ahead for potlucks.  Make a double batch on the weekend before, and bake the night before.

  24. I thought these recipe is excellent and simple. I like it because they were so easy and no need refrigerate for hours. The flavor was awesome I added paste vanilla and they tasted great. My husband and grandchildren loved them

  25. THE BEST is not an understatement. We were trying to find another recipe for a cookie day at work and decided to go with these and they did not disappoint. I had a colleague say before she tried one, “I will be honest, I am not a sugar cookie fan”…then you should’ve seen her face! She was so impressed and so was everyone else. Very light and fluffy, with a punch of flavor. I think the little bit of saltiness at the end really makes the cookie.

  35. Mine did not turn out. When i cooked them the butter ran out of them and they did not flatten.  I am not sure what i did wrong.  Do i need to alter the flour?  The dough was also dry and crumbly.

      I’m sorry that your cookies didn’t turn out. I’ve not had this happen and can’t be sure why it did exactly but it sounds as if the butter may have gotten too warm while working with the dough. You can put them back in the fridge for a few minutes before continuing to roll the cookies. You won’t make any changes to the recipe itself. Hope this helps. Thanks!

  37. I love these cookies and have made them twice. I doubled the recipe because my grandchildren love them. I am having an issue though, they seem so dry and difficult to form into a ball?  Am I doing something wrong?  I have read over and over the ingredients and not missing anything but still dry and hard to form into ball for cookie sheet…help They do taste good though after finally completing baking

      I’m so happy you and your grandchildren enjoy the cookies! I’m sorry but I’m not sure what is causing them to be dry – I haven’t had that happen. I am wondering if it has to do with the double batch. I think if you try mixing the dough one recipe worth at a time, that might help keep the butter in the dough mixture at the best temperature for forming the dough into balls. I hope this helps!

These are AWESOME.  My niece was a little down because she was too young to go to baking camp with her sister, so I told her we can do our own baking and ended up making these cookies.  They were perfect.  Nice and chewy and not overly sweet.  We ate one whole sheet of cookies within 10 min.  And the best part was she forgot all about baking camp.

  40. This is the absolute best recipe ever. I have never baked this many of anything in my life. No matter the time or the occasion, I get asked all the time for these cookies. Everyone I know loves them. I’ve done these for bake-sales for my sister, work snacks for my dad, get-togethers for my mum and parties with my friends.   46. Haven’t tried these yet but love soft chewy sugar cookies. I have found tho to only buy good quality butter, not cheap brand. Too much water in those butter and that could cause them to be flat & spread. Going to try these, thanks!
