How to Make Southern Sausage Cheddar Quiche

You only need a few simple ingredients. Here’s how I make it.

Ingredients

Butterย – You’ll want to let the butter soften before use so that you can easily spread it around the sides and bottom of the skillet you’ll use to bake the quiche.ย

Biscuit Dough Crust: Use Self-rising flour and heavy cream to produce a light, tender, and flaky biscuit crust. You can make self-rising flour at home if you don’t happen to have some on hand. If you want to use a store-bought deep pie crust, you can, but I hope you try this easy biscuit crust because it tastes amazing with this quiche recipe!

Filling: Use Ground breakfast sausage, shredded cheddar cheese, large eggs, milk, salt, and pepper

A large cast iron skillet holds cream biscuit dough to make a crust for quiche. A bag of self-rising flour sits close by the skillet and all are placed on a wooden board.

Step-by-Step Instructions

Preheat and Prep. Preheat oven to 400 degrees Fahrenheit. Prepare the skillet by spreading the softened butter around the inside of a 12-inch, medium-sized skillet. Set the skillet aside.ย

Mix dough for biscuit crust. Mix the ingredients for theย two-ingredient cream biscuit recipeย as the crust. It’s a bit quicker to make than a pie crust.

Press dough in skillet. Once you’ve made the dough, press it into the bottom and up the sides of the skillet about two inches.

A cast iron skillet holds a biscuit crust filled with browned sausage and freshly grated cheddar cheese, while more grated cheese sits nearby on the wooden countertop.

Brown the sausage. In another medium skillet, crumble the ground sausage into it and brown it over medium heat until done, for about 5 minutes. Remove from heat. Use a slotted spoon to remove/drain the browned sausage and sprinkle it on top of the biscuit dough. Then, top the sausage with shredded cheddar cheese.

Egg mixture being poured from mixing bowl into iron skillet with biscuit crust, sausage, and cheddar.

Whisk egg mixture. Whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the sausage and cheddar cheese.

Shredded cheese tops egg mixture and browned sausage on a biscuit crust in an iron skillet as it is ready to go into the oven to bake.

Bake. Pop it into the oven to bake until the egg mixture has set and cooked through, and the quiche reaches a golden brown on top. About 20 minutes.

Rest and serve. Remove the quiche from the oven and let rest for a minute or so. Then slice and serve.

I enjoy serving for many occasions – and even though it’s quick and easy, it’s also great to make ahead! A special breakfast or brunch for holidays and weekends with my family or weekend guests, as well as brunch parties and showers, are all perfect times to enjoy this cheesy quiche! Add one of the fresh sides listed previously for a meal everyone always loves!

  1. todd says:

I’m guessing buttermilk would work instead of heavy cream. Would you recommend a 1:1 substitute? Equal parts buttermilk and heavy cream (totalling the 1 1/2 cups?)

I’ll find out anyway, since I’m definitely making this weekend.

    Thanks!

    1. Robyn Stone says:

I’ve never made this quiche with buttermilk, Todd, so I can’t tell you how it would turn out. It you make it that way, let me know how you liked it.

  2. cheryl says:

Could you use Biscuit mix for crust?

    1. Robyn Stone says:

I have not used Biscuit mix to make the crust for this, Cheryl. You can also use a deep dish pie crust if you want, too.

Thank you. Enjoy your recipes and personal story about each.
I also have your cookbook. Very good
