Meal Plan Tips:
Sunday:
Easy Pepper Steak: This is a favorite from my childhood that I simply had to include in my cookbook – but I made it even easier by making it a Slow Cooker recipe!
If I want to save time, I’ll place all the ingredients in the insert to the slow cooker, cover and refrigerate before going to bed the night before. Then in the morning, I put it the slow cooker and make the rice and green beans later in the day. The house smells amazing with that cooking all day!
Tuesday:
Instant Pot Sweet Potato Chili:Â This delicious, flavorful recipe is on the table in less than 30 minutes with minimal prep. The Instant Pot makes it so simple and easy!
Wednesday:
Buffalo Chicken Enchiladas: This recipe is a perfect one for a busy weeknight! I will use chicken that I’ve either cooked ahead this week or use my Instant Pot Chicken recipe to make it in a snap. My easy Best Blender Enchilada Sauce comes together in a couple of minutes so I can make it then. I could also already have it or my other Enchilada Sauce in the fridge, along with my Buffalo Sauce I’ve prepped ahead. Then the recipe is super simple to cook and have on the table in under 30 minutes!
Thursday:
Slow Cooker Vegetable Soup:Â Add all of your ingredients to the slow cooker insert, cover with the lid and store in the refrigerator overnight. Then, before heading out the door in the morning, grab your insert out of the fridge and let it come to room temperature as you have breakfast. Then, start it the slow cooker right before leaving in the morning.
Friday:
Skillet Rib Eye Steaks: This steak is certainly a recipe that’s perfect to celebrate the end of the busy work week and beginning of the weekend!
The night before, I will place the rib eye steaks onto a baking sheet and then season according to the recipe. I like to place my steaks in the refrigerator overnight, then take out at least 30 minutes ahead of cooking on the night I’m going to serve them.
Perfect Baked Potato: You can always make these ahead and simply reheat or if you prefer, you can use the slow cooker method instead.
Have a great week!

I was able to see the easy pepper steak recipe when I first opened up #105 meal plan
but after searching for it the next day I can not get the recipe. Is there anyway to
see this recipe?
