How to Make Bacon Blue Cheese Dip Recipe

For this recipe, you’ll need the following:

  • Cream cheese – you’ll need softened cream cheese for this recipe.
  • Half-and-half – you can also substitute with heavy cream or whole milk.
  • Blue cheese – you can also substitute with gorgonzola or even feta if you prefer.
  • Bacon – cooked and crumbled is delicious and hearty in this recipe.
  • Chives – I like to mix chopped fresh chives into the dip and sprinkle them on top once it has baked. You can substitute with dried chives or even finely sliced green onions.
  • For serving: Crackers and fruit

Step-by-Step Instructions

  • Whip cream cheese, half and half, and blue cheese together until light and fluffy.
  • Stir in the crispy crumbled bacon and the chives and then spread the dip in a 10-inch skillet and bake until golden brown.
  • Once it has been baked, sprinkle it with more chives and serve it with crackers and fruit.

It makes such an easy and delicious appetizer. It is perfect for serving during the holidays, watching football games, to just enjoying a quiet weekend at home with your family!

Storage Tips

To make ahead (unbaked). Prepare as directed and spread into a baking dish or pie plate without baking. Cover tightly and store in the refrigerator for up to 3 days. Alternately, store the mixture in an airtight container and then transfer it to a skillet for baking. When ready to serve, remove from the refrigerator and bake. You may need to add a few more minutes to the baking time.

To make ahead (baked). Prepare as directed. Allow to cool. Cover tightly and store in the refrigerator for up to 3 days.

To freeze. I do not recommend freezing this recipe.

Ingredients

  • 2 (8-ounce) packages cream cheese, softened
  • 1/3 cup half-and-half
  • 5 ounces crumbled blue cheese
  • 5 slices cooked bacon, crumbled
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon minced fresh chives, for topping (optional)
  • assorted crackers and fruit, for serving

Instructions 

  • Beat cream cheese at medium speed with an electric mixer until smooth. Slowly add the half-and-half, beating until combined. Stir in the bacon, blue cheese, and chopped chives. Spread dip into a 10-inch skillet or baking dish and bake at 350ยฐF until golden brown, about 25 minutes. Sprinkle with minced chives, if using, and serve warm with assorted crackers and fruit such as apples, pears or grapes.

    I made this for an event at work and served it with apple slices. Everyone seemed to love it. Was really easy. I just so happened to have all the ingredients to hand for halfing the recipe. Put it together on New Yearโ€™s Day in a matter of minutes, stored in the fridge for several days, baked in the oven in the morning while I got ready for work. It smelled amazing.     I LOVE blue cheese and will definitely have this in my file of appetizers. I have a question for you, Ms. Robyn. How do you clean your little cast iron pan after cooking something like this. I have a small seasoned pan, but am reluctant to use it for a cheesy dish. I don’t want to ruin the pan. Do you prep the pan in any way? Thank you.

      I sure hope you enjoy this dip! It is so flavorful and easy! I make sure that my cast iron is well seasoned before using and you can even rub a bit more olive oil into your skillet before you add the dip for baking. I hope that helps! xo
