When it gets cold outside, I immediately start thinking of rich, hearty, comforting meals I can make for dinner. Like my grandmother’s southern chicken and dumplings or beef bourguignon. I’d planned on making an elaborate beef stroganoff for dinner last night, but as usual with the daily rush, I was a bit behind. I arrived back home later than expected and my family was ready for dinner. Right then.
Does your day ever work out like that? You have big plans for an amazing meal for supper that isn’t a quick-fix sort of meal. In your mind you imagine how delicious it will smell cooking all afternoon, how beautiful it will be when it is cooked, and how much everyone will love it when they take that first bite. No arguments from your children on wanting something different for this meal. In your mind, everyone is agreeable and the evening goes off without a hitch. If I didn’t think it would carry my dreaming too far, I might even imagine soft music playing in the background and my hair and makeup being perfectly fixed as I look 15 pounds skinnier. Hey, if you can dream, dream big, right?
Anyway, that’s not how my day wound up. That’s when my mind cues the sound of the needle scratching across a record on the record player. Do you remember that sound? You do, don’t you? Please tell me I’m not the only one.
Again, my day took a slight detour.
Simple Beef Stroganoff
So, I strayed from the original way that I make beef stroganoff and came up with something quick, simple, and delicious. You would have thought I had been in the kitchen cooking for hours with the resulting full-flavored meal. To me, that’s what cooking is all about. Now, back to my imagination. Maybe they’ll tell me I look skinnier by bedtime!
How to Make Beef Stroganoff
To make my Simple Beef Stroganoff, I begin by slicing my beef roast into 1/4″ slices and set aside.
Then I heat olive oil in Dutch oven over medium heat. Then add in onion and cook until translucent, about 3 minutes. Add garlic and cook for about 3 minutes and then add the sliced beef. Cook until all beef has been lightly browned.
Next, add in cream of mushroom soup and milk. Stir until well-combined. Sprinkle in thyme, stir and then cover with lid. Continue to cook a few more minutes over medium heat until mixture is bubbling.

Simple Beef Stroganoff
- 2 pounds beef roast
- 2 tablespoons olive oil
- 1 medium onion cut into thin slices
- 2 cloves garlic chopped
- 2 cans cream of mushroom soup
- 1/2 cup milk
- 2 teaspoons thyme
- 1 package egg noodles cooked according to package directions
- Slice beef roast into 1/4" slices and set aside.
- Heat olive oil in Dutch oven over medium heat. Add in onion and cook until translucent, about 3 minutes. Add garlic and cook for about 3 minutes and then add sliced beef. Cook until all beef has been lightly browned.
- Add in cream of mushroom soup and milk. Stir until well-combined. Sprinkle in thyme, stir and then cover with lid.
- Drain and serve egg noodles topped with beef stroganoff.
- Salt and pepper to taste.
