Roasted potatoes make the perfect dish with so many meals! Three ingredients make these roasted potatoes so simple to throw together on a busy weeknight, yet still scrumptious enough when entertaining.
These roasted potatoes happen fairly often at my house. Most likely because they are so easy to prepare on those busy weeknights that we all have way too frequently. It doesn’t hurt that I can always count on them to be one of the first things to disappear as well. Everyone loves them with their crisp outer edges and soft, tender centers.
Made with large potatoes that I’ve scrubbed, a drizzle of olive oil and a healthy sprinkle of salt, these roasted potatoes are fast and fabulous! My son actually requests them now, especially if he has friends coming over that will be eating supper with us. All of his friends love them, but I absolutely love it when they make requests!
They also love them as their breakfast potatoes, too! Served them sausage, eggs, and cheese grits, biscuits, with these potatoes and those boys are super quiet for a little bit!
If you want to jazz these babies up, serve them with a sprinkle of spices like my Cajun spice mix. Oh my goodness! You can also serve them with a sprinkle of fresh herbs like rosemary or thyme when they are fresh out of the oven or with a side of sour cream mixed with fresh chives and scallions, which is always delicious. Or, you could just serve them as simply as possible, like my son likes them. Either way, just watch them disappear!

Roasted Potatoes Recipe
Ingredients
- 6 potatoes, scrubbed clean
- olive oil
- kosher salt
Instructions
- Preheat oven to 425ยบ F.
- Slice potatoes into 1/4-inch slices and place onto rimmed baking sheet. Drizzle with olive oil and sprinkle liberally with salt. Bake 20-25 minutes or until edges are crisp and the potatoes have turned brown from roasting.
- Remove from the oven and serve warm.
