MEAL PLAN TIPS:

I can’t believe summer is almost over! It seems like it really just flew by! This long weekend, my family will enjoy time celebrating the unofficial end of summer with family and friends. I’m looking forward to some time at the lake, some time at the farm, birthday celebrations for Mama and Bart and lots of delicious food! I’ll be cooking so many tasty favorite foods that we all enjoy – and some of this food will work for dishes later in the week.

Saturday:
Homemade Hamburgers and Fixings: I’ll make my hamburger patties ahead of time and keep in the fridge until ready to grill. Prepare all of the fixings ahead of time, seal in containers and refrigerate.

Spicy Sweet Potato Wedges are made and ready to cook, and my peach cobbler is baked too. I think the Caprese Salad is best made and served fresh, but my Balsamic Glaze is already made and on hand.

Sunday:
Grilled Chicken with Marinade: Make marinade ahead and marinate chicken ahead too for the best, most delicious and juicy chicken! I’m grilling a couple of extra chicken breasts for another meal later this week.

Easy Tortellini Pasta Salad: Delicious served warm or cold, which makes this a perfect salad to make ahead.

Strawberry Shortcake with Cream Cheese Biscuits: I get the strawberries hulled, sliced and ready to go for these ahead of time. This dessert is a regular family favorite that’s in my cookbook!

Monday:
Sticky Molasses Ribs: These are from the cookbook.  I’ve already made the sauce and have it in a container in the refrigerator. The ribs are in the freezer and I’ll let them thaw overnight. This morning, I’ll add the ribs and sauce to the slow cooker and go on about our day of family activities.

Pulled Pork Sandwiches: Let the slow cooker do all the hard work for you. You can easily put everything into the slow cooker insert the evening before and refrigerate. If you are eating early during this holiday, then you can go ahead and let this cook during the night in your slow cooker.

Coleslaw: This coleslaw comes together in a snap, but is also a great make-ahead side dish, too.

Best Southern Baked Beans: This cooks for a while to bring out that amazing, rich flavor, so you can make this earlier in the day if you wish and reheat.

Southern Potato Salad: Make the potato salad the night before and refrigerate – so easy and so good.

Wednesday:
Grilled Chicken Salad with Pesto Ranch Dressing: This delicious salad is super make-ahead friendly – and I’ve grilled the chicken ahead when I grilled this weekend. I’ve prepped the dressing ahead and it’s chilling in the refrigerator. Chop your veggies for this salad, add the chicken and dressing and supper is served!

Thursday:
Skillet Chicken Caprese: This is an easy, skillet version of my Grilled Chicken Caprese dish that’s been a popular favorite for many years. So easy to make all in one skillet – and so delicious! Supper’s easy tonight too!

I hope you have a wonderful long weekend!

  1. Dear Robyn,
On Friday I went to the library just to get a novel for the long weekend but also saw your cookbook and was immediately hooked. As I began turning down almost every page, I decided I needed to buy my own copy as your book is a treasure. I actually started my Christmas shopping and bought another Add a Pinch Cookbook for a friend. Thank you for all of the time, creativity, and love you put into your blog and your cookbook. You are AWESOME! Have a great weekend.

    • Oh my goodness! You made my day! I’m so glad that you picked up the cookbook for the holiday weekend and loved it! I hope you enjoy using it and love all of the recipes! xo
