Meal Plan Tips:
Swedish Meatballs: This has been a favorite in my family for as long as I remember. And these delicious meatballs make a great appetizer too! If you want to make ahead, go ahead and form the meatballs and refrigerate until time to prepare supper. It’s delicious served with rice, twirly noodles, or on top of my creamy mashed potatoes.
Sunday – Chili Night/Game Night:
I know that my family and friends will enjoy having a casual Chili Night with all the fixings while watching the game – and the famous commercials! The appetizers can be made ahead of time and the chilis are so easy to make and serve. I just love casual and easy (and delicious of course) for a game night!
White Chicken Chili: I add the ingredients in my slow cooker and let this cook during the day. My recipe instructions are also detailed to include cooking this chili on the stovetop or in your Instant Pot if you wish.
Weeknight Black Bean Chili: What a simply delicious and easy chili! It’s a favorite in my house and ready in 30 minutes. I love that it’s so good – but that it doesn’t have to cook all day long!
Buffalo Chicken Enchiladas: This favorite is so simple and easy that I like to serve it on busy weeknights. I use my Instant Pot Chicken recipe to cook the chicken. My easy Best Blender Enchilada Sauce is ready in minutes so I make it as I’m cooking supper. I will use my Buffalo Sauce I’ve prepped ahead. Super simple to cook and have on the table in under 30 minutes!
Slow Cooker Vegetable Soup: This comforting, easy and flavorful soup is always a favorite, especially on chilly nights. I love that it’s so super simple to make in the slow cooker! Hot cornbread with this scrumptious soup hits the spot!
Skillet Rib Eye: The night before, I will place the rib eye steaks onto a sheet pan and season them according to the recipe. I like to place my steaks in the refrigerator overnight, then take out at least 30 minutes ahead of cooking on the night I’m going to serve them. These steaks are absolutely scrumptious!
Perfect Baked Potato: If you wish, you can make these ahead and reheat or you can use the slow cooker method instead.
Have a great week!
